Based loosely on this. I recommend meals like this no more than once a month unless you wish to be the subject of mathematical jokes starting "Assume a spherical cow."

It is, however, unspeakably nice. It's where mushrooms go when they have been Really Quite Remarkably Good Indeed.

Frying pan
Olive oil
300-500g mushrooms, diced largeish
25-50g butter
300ml double cream
A squirt of soy sauce
Just a little tabasco
Pasta, preferably penne

Olive oil into the pan. Fry the mushrooms in it. Add the butter. Fry the mushrooms a bit longer.

(At this point, you should taste a piece or two of mushroom. You'll see what I mean above. OH MY GOD.)

Put the penne on. Add the cream, soy sauce and chili. Stir lots and lots. It should be reduced by the time the penne is done.

Serve. Eat slowly.

Under no circumstances endeavour to count the calories.

(I used to eat meals like this all the time in Fitzroy cafés. I'm amazed I didn't have to roll there and back.)

Actually, garlic goes quite well with cream... you just have to smoosh it up a bit more than normal.

If you replace the soy/tobasco with some freshly chopped dill/rosemary, and serve it on thick, toasted wholemeal-bread, it's also dead lovely. I generally use chestnut mushrooms halved.
And yes, don't even think about the calories.

I'll try it this weekend with Elmlea Light (buttermilk based cream substitute) and a good helping of cracked black pepper. I'll let you know if it was successful. Pity you can't really substitute the butter... or maybe you can?

I think you're looking at it all wrong -- it's not unhealthy if it's got good stuff like pasta and mushies; sooo many mushrooms! ;)

not necessarily a bad thing if you do something energetic to use the calories...you decide what. This is left as an exercise for the reader.

Damnation that sounds good. The only thing I would add to it is some fresh ground pepper and some freshly grated parmigiano cheese as a final garnish.

Alternative version. Delete tabasco and soy. Add snails prior to mushrooms, followed by garlic and mix in finely chopped parsley prior to serving.
