Tonight I made a variant on this, which nyecamden made a variant of for me on Tuesday. I used mature cheddar instead of Stilton because everyone else in the house is a heathen who doesn't like cheese that fights back, and added mushrooms. The sauce ends up a bit runny, but it works really nicely.
